Eva's Frozen Birthday Party


Eva turned 6 at the end of October, and like many other little girls, requested a Frozen birthday party. With the help of her very creative sisters, we pulled it off, and had a lot of fun putting it together. And let me add, we did this whole party on a very tight budget, using many things we already had and filling in the rest with items from dollar and discount stores. I think Eva will remember her magical birthday for a long time to come. Her exclamations of  "this is the best birthday ever!" made it so worth while!


We picked light blue, teal, silver and white to create our winter wonderland. A simple white vase with some sticks from the backyard and a few glittery Christmas ornaments made a dazzling center piece. We covered the table with a bag of fake snow and added a few tea-lights in mason jars and more glittery snowflakes. We tied the napkins with string and silver icicles.






Her birthday banner was a few doilies and some teal glitter glue. We decorated the ceiling with more tinsel and Christmas tree ornaments. We added some snowballs by stringing cotton onto some cotton thread.



Our menu was super simple and very kid friendly. We had wraps with ham or turkey and cheese and grilled on the panini. We served these little pinwheels with honey mustard sauce. {I used GF wraps for Eva}. We also had Olaf noses (carrots) and jello cubes. I made the jello cubes healthy, using only gelatin and 100% grape juice. They were supposed to be blue, but since all of the juices that were blue were very artificial and loaded with food coloring, our ice was purple!


And everyone's favorite part of the meal were the Melted Olafs. I used plain coconut yogurt for Eva's Olaf, and Greek yogurt for the others.

Our birthday games included a "snowball treasure hunt" where we hid LOTS of cotton balls and had the children look for them. We also played "pin the nose on Olaf!"


For our craft we made icicle pictures. Simply mix epsom-salt with a little water (water should be very warm). Have the children paint winter pictures on a black piece of construction paper. When the picture dries up they will have a crystal picture. {When the crystals dry up it is a little messy; I suggest putting your finished art work inside a plastic sleeve} Alternately, you could make chalk drawings.

We finished the festivities with, you guessed it, ANOTHER viewing of Frozen and Eva belting out "Let it go!" This girl can sing! I love to see how far she's come over this past year. The song "Do you want to build a snowman?" was the song that finally helped Eva learn to pronounce the "SN" sound. Before that she could never say the "S" - it just came out as "Noman." God is so good!

Big sister Elise hand drew Elsa and Anna and framed it for Eva's room- isn't it sweet?

Mom Turns 70!

My Mom, better known as Oma  (the Dutch word for Grandma) turned 70 in May. The whole family came together to celebrate this special occasion. We celebrated the event at Mike and Judith's beautiful new home. And after some very hot and humid weather, we were blessed with perfect weather- 70 degrees!




My mom loves to cook and have people over. So it was fun to let her be on the receiving end for once. We came up with a simple make-ahead menu: mustard baked pork-tenderloin, potato salad, green bean salad with balsamic vinegar and shallots, homemade rolls, a large garden salad and watermelon. Dessert included strawberry shortcake (with freshly picked berries), key-lime tarts and chocolate mousse cups.

                                     





We decorated with miscellaneous painted jars filled with fresh flowers in a grey and yellow floral theme. The kids sat outside on the deck.



The grandchildren made special pages as a keepsake for their Oma- pictures, sayings and poems to honor her. We also sang her favorite hymns together and read Psalm 90, a Dekker family tradition recited at birthdays.



Seventy used to seem so old. But somehow when your parents reach that age it no longer seems so far away! How quickly life moves along... "So teach us to number our days, that we may gain a heart of wisdom." (Psalm 90: 12).

The Twins Turn 9

This post is way overdue, but I thought I'd post a few pictures of the twins' 9th birthday (which was in November), especially for the grandma (Oma) who lives far away. 


They say twins bring double the trouble, which at times is the case. But they also bring double the joy, laughter and smiles!


We celebrated their birthday with a farm theme. Right now they both really like farming. They would love to own a milk cow, some goats or maybe a few pigs- but for now they take care of  our chickens and the dogs.




They picked hotdogs, baked beans, chips & fruit for their birthday dinner {Eva's hotdog is missing from the picture since she is gluten free :) }

This was supposed to have grapes for the center, but my organic grapes were moldy- so I had to improvise and use apples instead. Oh well, the kids still liked it!




The girls made fun little name cards and we fastened them to the bowls with old-fashioned clothes pins

These boys are the BEST of friends and do everything together


They are usually having fun or goofing off...


They look a lot alike and they like many of the same things, but they definitely are each unique. I am so thankful that God blessed our family with twin boys!

Baby Turns One!



I can't believe my sweet little baby turned one just a few weeks ago! I think each baby grows up just a little bit faster. Turning one is always bittersweet. I love seeing the little person she is becoming- the wobbly steps, funny expressions and new words. But on the other hand I hate to leave behind the baby stage- warm snuggles (that last more than a few seconds), night time feedings and those tiny fingers and toes...

We had a simple cake & punch party to celebrate Addie's first birthday- but we made it healthy at the same time, gluten and sugar free.


We decorated with lots of roses for our Addison Rose. I found these gorgeous roses at Trader Joe's for $3.99 a bunch!






Little boxes decorated with paper flowers made out of cupcake liners were our party favors. The girls received things like bracelets, hair ties and bubbles. The boys had boy things- all from the dollar store...


Vanilla cake (grain free) with Chocolate Icing and fresh strawberries. Surprise ingredient- avocados in the chocolate frosting! You would never know- it was delicious (and nutritious!) Recipes linked below...


Punch made with 100% fruit juice (apple cranberry) and sparkling club soda. We made ice cubes with frozen raspberries for a festive touch.


Also on the menu, fresh fruit salad and orange cashew date balls (one of Addie's favorites)



Tasting chocolate for the first time, and she wanted more! 




I found the recipe for the Vanilla Cake here. The only change I made was that I omitted the chocolate raspberry stevia because I didn't have it. I also would highly recommend using parchment paper to line the pans. I had a hard time getting the cakes out when I followed her directions. I would cut a circle to fit the bottom of the pan.

The Chocolate Avocado Frosting is taken from Nourishing Meals by Alissa Segersten and Tom Malterre, page 472. (They also have a great website, but I couldn't find this recipe online).

    3 small ripe avocados, about 1 cup mashed
    1/2 cup maple syrup or honey
    1/2 cup cocoa  powder
    1/4 cup melted coconut oil
    1 to 2 tsp almond flavoring/extract
    1 Tablespoon vanilla
    1 teaspoon lemon juice

Process all ingredients in food processor fitted with a "S" blade until smooth and creamy. Put frosting in container and refrigerate for 2 hours before using. (I found it was quite thick without having to refrigerate it)
This was enough frosting to decorate the entire cake. It makes about 2 cups.
